This is a smaller bean that roasts relatively well. It is not as aromatic as the columbian coffee but delivers a nice smooth flavour when added to a latte.

Mexican Chiapas is one of my favourite coffee beans. I usually purchase it dark roasted. I roasted it to the second crack and was pleased with the result. This coffee is bright and strong when dark roasted, not too bitter, with a very "comfort food" kind of satisfying taste.
