The Costa Rica Fair Trade Organic has a lot of variability which makes this a fun bean to roast and sometimes frustrating. On the light side it can have berry flavours and some milk-chocolatey notes - in a darker roast it will have more of a winey finish and bittersweet chocolate flavours.
